Tomatoes, Eggplants and Other Fried Vegetables

Add the tomatoes to the boiling water for 20 to 30 seconds until the skin begins to wrinkle and peel away from the flesh.

Cut into halves or slices 2-4 parts and salt.

Fry on both sides.

Clean zucchini, pumpkin, and eggplants and remove the stalk.

Remove seeds from pumpkins and large zucchini.

Cut into circles or slices and salt(let eggplants sit for 10-15 minutes to remove bitterness).

Coat in flour and fry.

Finish eggplant and pumpkin in an oven or a frying pan under a lid.

Serve vegetables with sour cream or sour cream with tomato sauce.
