Peppers Stuffed with Vegetables

Cut the tops off the bell peppers and remove the stems. Scoop out the seeds and as much of the membrane as you can.

Pour with hot water and boil for 1-2 minutes.

Throw in a colander and cool down.

Cut carrots and parsley root into strips and saute.

Cut onions into half rings and saute.

Saute tomato puree or cut and fry fresh tomatoes.

Mix carrots, parsley root, onions and tomatoes.

Season with sugar and vinegar and boil up.

Fill peppers with minced vegetables and put on a baking sheet or stewpan and bake with a small amount of liquid.

These delicious stuffed peppers are loaded with sautéed vegetables and are loved by meat-eaters and vegetarians alike!
